What better way to start Spring than to learn how to assemble and decorate your very own gingerbread birdhouse in time for Mother’s Day!


We will teach you how to assemble the handmade pre-baked gingerbread cookies into a lovely birdhouse which you will then decorate. You will learn how to make royal icing and how to use it to attach the walls and roof so that everything is sturdy and secure. And once the basic frame of your gingerbread birdhouse is constructed, the creative fun begins! We will teach you several different decorating techniques including royal icing piping, stencilling and embossing techniques, and how to make sugar paste vines, flowers, birds, roof  tiles, wood-effect panelling, and other decorations to embellish your gingerbread birdhouse. We will explain the steps you should take at home to make flat, well-shaped and evenly baked biscuits/cookies ready for decorating—so you can recreate this gingerbread house and more at home. And we will give you other decorating tips and tricks for engineering well-fitted 3D gingerbread constructions.


We provide all the materials and equipment for you. You can take home your Gingerbread Birdhouse, together with complete instructions, recipes and suggestions for creating other gingerbread house designs at home.

We will provide all the materials and equipment for you to use in class. You will just need to bring an apron, and pen/paper.


Take Home

You will make a 9-inch tall 3D gingerbread birdhouse on a pretty cake board, all boxed up. Class notes will be supplied and will include recipes and methods, plus materials and suppliers information.
